As I began my quest for healing, I realized there are many things I had been eating that were not only lacking nutrition, but actually harming my body on the cellular level. Sadly, bread was one of those things. Not that bread is bad for us. Unfortunately, the mass produced loaves found on the store shelves are defecient in beneficial nutrients and usually have multiple items added as preservatives to increase the shelf life. Sadly, those ingredients do nothing to increase our shelf lives.
But who doesn’t love a good sandwich? And even while healing, it’s an excellent way to get multiple healthy ingredients into one bite. So my first step was to read the ingredient labels. Boy, did that narrow down my options. Eventually, I settled with two different breads. Ezekiel Flourless Sprouted Bread and from Aldi, Simply Nature Flourless Bread. Both were good options and the lesser of many evils. I was only eating one sandwich a week, at the most, so the loaves went in the freezer and I removed two slices at a time, as needed.

As most recipes happen, this idea came to me when I was making something else. I had created a mixture I was using for wraps and it occured to me, if I just reduce the amount of water, the batter would be thick enough to form a sandwich round (similar to a pancake). Once I got the consistency right, it just came down to having the right equipment which, luckily, was already in the kitchen.
These are simple to make. The recipe can create 8-12 rounds depending on the thickness of the batter and the amount used for each round. As always, that is up to the creator’s discretion. They are easily stored in the fridge for two weeks or more, so no need to worry about making too many. They are delicious and make a nutritious surrounding for the healthy sandwich fillers of your choice.
Serving Tip: When I remove them from the fridge, I put them in the toaster until they reach the desired firmness. They are very soft and I like them a little crispy on the edges.

Items Needed:
- Measuring Cups
- Measuring Spoons
- Spice Grinder
- Blender
- Non-Stick Pan (I use a crepe maker)
- 4 Egg Rings
- Spatula
- Cooling Rack
Ingredients*:
- 2/3 Cup Quinoa
- 1 tbsp Flax Seed
- 1Tbsp Chia Seed
- 1 tsp Black Cumin Seed
- 1 1/2 cups Water
Directions: (Makes 8-10 Rounds)
Pre-heat non-stick pan. Add quinoa, flax, chia and black seed into blender. Add water. Blend until batter consistency. Place egg rings in pan (I use coconut oil on the rings to help the molds separate from the rounds). Pour 1/4 cup of batter into each ring. Cook on one side until batter is cooked through. Flip to cook on the other side. Leave in pan until desired. Remove from pan and place on cooling rack. Let cool and refrigerate until used. TIP: I stack the rounds in a container and I place a paper towel square in between to prevent sticking (could also use parchment paper).

Quinoa:

- Chia seeds are a favourite cancer-fighting superfood. They are known to kill the cancerous cells without harming the healthy cells in the body.
Black Cumin Seed:
- Protein, Potassium, Phosphorus, Calcium, Magnesium, Vitamin A, Vitamin C, Vitamin E, B vitamins, Thymoquinone.
- Animal studies have shown that black cumin seed can stop the growth of tumor cells and reduce the incidence of tumors. It is effective against cancer in blood system, lung, kidney, liver, prostate, breast, cervix, skin with much safety.
